Chef John Winter Russell serves a four course tasting menu firmly committed to seasonal and local ingredients, with no exceptions. Earthly ethics extend to the wine list, where Vincent Laniel as Sommelier together with Emily Campeau curate a fine selection of biodynamic, organic, and natural wines from all around the world, in addition to a large selection of Quebec wines!
